I have been woefully absent, yet again. However, I have been present on the companion I made to this on Facebook, and that has postings nearly daily. I am currently posting seasonally themed goodies like butternut squash and apples and pumpkin recipes. The above picture was of some of the goodies from Mike's mom's garden, his sister's and my mini garden. Basil, curly kale, purple Kohlrabi rhubarb and zucchini were my contributions. His mom had eggplant, onions, lima beans and peppers, and his sister had some great sweet corn. I was totally bummed this year as my tomatoes, including an heirloom variety looked wonderful, and then halfway in forming fruit, got a terrible black wilt and they were toes up in 3 days. I was completely desolate over this. So, no tomatoes there for me the next few years, we will change things up.
The facebook page is https://www.facebook.com/PennsylvaniaCooking and all are welcome and feel free to contribute as well.
I am going to play catch up with several recipes and posts here.
I see a lot of veggies that don't seem to be in fashion or that folks who aren't gardeners or farmers simply have no clue about, and they are missing out on some great stuff.
Turnips are one of Autumns treats to me. Not only are they nutritious, good raw and cooked, but also really versatile. here's a favorite this time of year.
Turnip Casserole
Cube a potato pan full of peeled and cubed turnips and cook until tender.
Then prepare the white sauce.
White Sauce
1/4 C butter
1/4 C flour
2 1/2 C milk
1 tsp salt
Melt butter over low heat, stir in flour (making a rue), add milk slowly, stirring.
Put in greased casserole dish, layer turnips and pats of butter and grated cheese or cheese slices on top, sprinkle with Italian or panko bread crumbs.
Bake @ 350 for 40 min.
Also another cold weather favorite of mine is Corn Pudding. This is my mom's recipe and a favorite since I was a kid.
Corn Pudding
2 cans creamed corn
3 eggs
1/2 C milk
1/2 diced medium onion
1/2 C brown sugar or maple syrup
bread cubes
bread crumbs
Mix the first 5 ingredients well.
Then add bread cubes to stiffen batter to medium.
Put in a greased casserole dish.
Top with bread crumbs.
Bake in covered casserole at 325 for about 45 min, taking lid off last 10 minutes.
